Bombay Potato Recipe

A classic Indian favourite, Bombay Potatoes are crispy, golden and full of flavour. Made with our authentic Bombay Potato Spice Mix, this simple recipe delivers the perfect blend of spice and aroma – ideal as a side dish for curries, grilled meats or a quick midweek supper.


Shopping List

  • Baby potatoes – 1 kg
  • Onion – 300 g, chopped
  • Coriander leaves – a small bunch
  • Lemon – a few drops
  • Sunflower oil
  • Turmeric powder – ½ tsp
  • Salt – to taste

Cooking Method

  1. Chop the potatoes to your preferred size. If the potatoes are very small and you choose not to cut them, prick each one with a knife.
  2. Boil the potatoes with salt and turmeric until half cooked.
  3. Preheat the oven to 200°C while the potatoes are cooking.
  4. Drain the potatoes and transfer them to a baking dish.
  5. Add the chopped onion, the full pack of Bombay Potato Spice Mix, chopped coriander leaves and 2 tbsp sunflower oil. Mix well.
  6. For a hotter dish, add ½ tsp red chilli powder.
  7. Bake in the centre of the oven for 20 minutes or until the potatoes are crisp and cooked through. Slight browning on the skin enhances the flavour.
  8. Finish with extra salt if required, a handful of fresh coriander leaves and a few drops of lemon juice.

Tip: You can halve the spice pack to cook 500 g of potatoes if preferred.
