Malabar Lamb or Beef Masala Recipe

Malabar Red Meat Masala is a rich, aromatic curry from the Malabar coast of Kerala. Using our Malabar Red Meat Masala Spice Mix, this recipe creates a deeply flavoured sauce with gentle heat and a creamy finish from coconut milk. Perfect for lamb or beef, this dish is full of authentic coastal character.
Shopping List
- Lamb or beef – 500 g, diced
- Onion – 250 g, thinly chopped
- Tomato – 250 g (around 3 medium tomatoes)
- Coriander leaves – a handful
- Coconut milk – ¾ cup
- Sunflower oil – 2 tbsp
- Salt – to taste
- Malabar Lamb or Beef Masala Spice Mix – 3 tbsp
Cooking Method

Sauté the onions
Heat 2 tbsp oil in a pan.
Sauté the onions until they turn brown. -
Add tomatoes
Add the chopped tomatoes and continue sautéing.
Cook until the tomatoes soften and become mushy. -
Add spice mix
Add 4 tbsp Malabar Lamb or Beef Masala Spice Mix.
Sauté gently and begin simmering.
Cook for 10–12 minutes on low heat until the raw smell of spices disappears.
Add ¼ cup water halfway through to prevent burning. -
Add the meat
Add the diced meat to the pan and mix thoroughly.
Cover and cook on low heat for at least 15 minutes.
Do not add extra water at this stage — the meat will release its own juices. -
Cook until tender
Add 2 cups of water and one chopped tomato.
Cook until the meat becomes soft.
Stir occasionally to avoid burning. -
Finish with coconut milk
Add the coconut milk and salt to taste.
Cook gently for 2 more minutes.
Top generously with coriander leaves.
Serve hot with rice or naan.
