Keralan Medium Vegetarian Curry (Stovetop Method)

This stovetop Kerala Curry Powder recipe creates a hearty, medium-spiced vegetarian curry using your choice of vegetables or soya protein. Simple, aromatic and full of authentic Kerala flavour.


Shopping List

  • Onion – 200 g, chopped
  • Mixed vegetables or soya – 500 g
    (potato, cauliflower, peas, beans, or soya chunks)
  • Tomato – 2 large
  • Kerala Medium Curry Powder – 1 tbsp (optional extra for heat)
  • Oil or butter – 1 tsp
  • Coriander leaves – to garnish
  • Salt – to taste

Cooking Method

  1. Prepare the base
    Heat oil or butter in a saucepan.
    Add the chopped onion and sauté until soft.
  2. Add vegetables
    Add the mixed vegetables or soya and sauté for 2–3 minutes.
  3. Add spices and tomato
    Stir in the Kerala Medium Curry Powder and salt.
    Add chopped tomatoes and mix thoroughly.
  4. Cook the curry
    Add enough water to cover the vegetables.
    Cook for 15–20 minutes, until the vegetables are soft and the curry is thickened.
  5. Finish
    Adjust seasoning if needed.
    Garnish with coriander leaves and serve with chapati or rice.
