Keralan Medium Vegetarian Curry (Stovetop Method)

This stovetop Kerala Curry Powder recipe creates a hearty, medium-spiced vegetarian curry using your choice of vegetables or soya protein. Simple, aromatic and full of authentic Kerala flavour.
Shopping List
- Onion – 200 g, chopped
- Mixed vegetables or soya – 500 g
(potato, cauliflower, peas, beans, or soya chunks) - Tomato – 2 large
- Kerala Medium Curry Powder – 1 tbsp (optional extra for heat)
- Oil or butter – 1 tsp
- Coriander leaves – to garnish
- Salt – to taste
Cooking Method

Prepare the base
Heat oil or butter in a saucepan.
Add the chopped onion and sauté until soft. -
Add vegetables
Add the mixed vegetables or soya and sauté for 2–3 minutes. -
Add spices and tomato
Stir in the Kerala Medium Curry Powder and salt.
Add chopped tomatoes and mix thoroughly. -
Cook the curry
Add enough water to cover the vegetables.
Cook for 15–20 minutes, until the vegetables are soft and the curry is thickened. -
Finish
Adjust seasoning if needed.
Garnish with coriander leaves and serve with chapati or rice.
