Kerala Medium Vegetarian Curry Recipe (Microwave Method)

This quick and simple Kerala Medium Curry Powder recipe is perfect for busy days. Using our authentic Kerala Curry Powder Spice Mix, you can create a warm, mildly spiced vegetarian curry in under 20 minutes using the microwave or hob.


Shopping List

  • Red lentils – 1.5 cups
  • Spinach – 2 cups
  • Kerala Medium Curry Powder – 2.5 tbsp
  • Salt – to taste
  • Ghee, butter or vegan alternative – 1 tbsp
  • Coriander leaves – to garnish

Cooking Method (Microwave)

  1. Combine ingredients
    In a microwave-safe dish, add red lentils, salt and Kerala Curry Powder.
    Add 4 cups of water the ingredients, you may need to add a little more after the curry is done cooking.
  2. Microwave
    Cook on full power for 18–20 minutes.
    Stir halfway through cooking.
  3. Finish
    Add ghee or butter and spinach and mix thoroughly.
    Garnish with fresh coriander leaves.
    Serve with chapati or rice.

Optional Hob Method

Cook in a pot on the hob in the same way, adding water as required and simmering until the lentils are soft.
