This quick and simple Kerala Medium Curry Powder recipe is perfect for busy days. Using our authentic Kerala Curry Powder Spice Mix, you can create a warm, mildly spiced vegetarian curry in under 20 minutes using the microwave or hob.
Shopping List
- Red lentils – 1.5 cups
- Spinach – 2 cups
- Kerala Medium Curry Powder – 2.5 tbsp
- Salt – to taste
- Ghee, butter or vegan alternative – 1 tbsp
- Coriander leaves – to garnish
Cooking Method (Microwave)

Combine ingredients
In a microwave-safe dish, add red lentils, salt and Kerala Curry Powder.
Add 4 cups of water the ingredients, you may need to add a little more after the curry is done cooking. -
Microwave
Cook on full power for 18–20 minutes.
Stir halfway through cooking. -
Finish
Add ghee or butter and spinach and mix thoroughly.
Garnish with fresh coriander leaves.
Serve with chapati or rice.
Optional Hob Method
Cook in a pot on the hob in the same way, adding water as required and simmering until the lentils are soft.
